125gr | Dark Chocolate |
3tblsp | Dark Rum |
20gr | Unsalted Butter – soft |
½ tsp | Crushed Cardamom Seeds |
¼ tsp | Hot Chilli Powder |
4 | Eggs – Separated – Beat the yolk lightly |
| Beat the whites till stiff |
In a heatproof bowl add the chocolate and rum, place onto a pan of simmering water (N.B. make sure the bowl does not touch the water).
Once the chocolate and rum have melted, remove from the heat and add the butter, cardamom and chilli, mix well. Add the egg yolks one by one and mix well.
Fold in the egg whites slowly until all is well mixed.
Spoon into dessert glasses and chill for 4 hours.
To finish – serve with some sweetened cream and grated chocolate
