Chocolate, Cardamom Chilli Mousse

125grDark Chocolate
3tblsp Dark Rum
20grUnsalted Butter – soft
½ tspCrushed Cardamom Seeds
¼ tspHot Chilli Powder
4  Eggs – Separated – Beat the yolk lightly
 Beat the whites till stiff

 

In a heatproof bowl add the chocolate and rum, place onto a pan of simmering water (N.B. make sure the bowl does not touch the water).

Once the chocolate and rum have melted, remove from the heat and add the butter, cardamom and chilli, mix well.  Add the egg yolks one by one and mix well.

 Fold in the egg whites slowly until all is well mixed.

Spoon into dessert glasses and chill for 4 hours.

To finish – serve with some sweetened cream and grated chocolate
